Applewood Chipotle Crock Pot Pulled Pork
1 pork loin roast (2 ½ -3 lb.)
2 or more tablespoons Applewood Chipotle Rub
1 cup of water
2 or more tablespoons Applewood Chipotle Rub

Rinse the pork loin and pat dry with paper towels.
Liberally cover the roast with Applewood Chipotle Rub. Tightly wrap the meat in plastic wrap and refrigerate overnight.
Add 1- 2 tablespoons of oil to a skillet over medium high heat and sear meat on all sides, just until browned.
Transfer the meat to the crock pot and add the water. Cover crock pot, set to high and cook for 5-6 hours.
When meat readily falls apart remove it from the crock pot to a cutting board and let rest for 10 minutes. Leave the liquid in the pot do not drain. Turn the crock pot down to low, shred the pork with 2 forks and transfer back into the pot with the remaining liquid and heat until warm.
Serve warm, use this to make sliders, tacos, chef salad or main course.
