Bulgur Wheat and Vegetables with Smoky Italian

 

1 ½ cups vegetable broth
½ cup bulgur wheat
1 medium zucchini, chopped
4 carrots, peeled and chopped
1/3 cup red onion, diced
2 cloves garlic, minced
2 tbsp basil infused olive oil or EVOO
2 tbsp butter
1 tbsp Smoky Italian
 
Prepare the Bulgur Wheat using vegetable broth, follow directions on the package.
 
Place carrots and ½ cup of water in a saucepan over medium heat.  Cover and let carrots steam until tender, about 5 minutes.  Add additional water if necessary.  Remove carrots and set aside.
 
In the same pan add the oil and butter and sauté onion, over medium heat, until tender.   Add garlic and sauté for 30 seconds then add the Smoky Italian Seasoning.
 
Place the carrots along with the zucchini back into the pan with the onion and garlic.  Add ½ cup of water, cover, and simmer over medium heat until zucchini is soft (5-10 minutes).  Stirring occasionally.
 
Turn off the heat and mix the prepared bulgur wheat in with the vegetables.  Mix ingredients until bulgur and Smoky Italian Seasoning is well incorporated.
 
Serve immediately as a side dish or main course.   Serve topped with grated Parmesan Cheese.
 
For a vegan alternative you can simply eliminate the butter and replace with an equal amount of oil.
