3 cups rolled oats
1/2 cup nuts, optional (any kind will do)
1/2 cup quality maple syrup
1/3 cup of your favorite oil
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon Classic Baking Blend
Preheat oven to 300 degrees. Line a rimmed baking sheet with parchment paper.
Place oats and nuts into a large bowl.
In a small bowl mix together the maple syrup, oil and vanilla extract. Pour this over the oat mixture and stir until everything is coated. Add salt and Classic Baking Blend and stir.
Pour this mixture evenly onto the lined baking tray. Place in the oven and bake for 40 minutes. Stir ever 10 minutes so it will bake evenly. Remove from oven and allow to cool. Mix in 1 cup of dried fruit or your favorite trail mix.
For extra crunchy granola, when baking time is complete, turn off oven, open oven door slightly and set your timer for 20 minutes. When 20 minutes is up, close the oven door, and allow the granola to cool in the oven, even over night. Remove from oven and add any dried fruit or trail mix of your choice
