1 cup old fashion-rolled oats
3 oz. white whole wheat flour
1/2 cup packed light brown sugar
2 tablespoons Classic Baking Blend
1/2 teaspoon kosher salt
1/2 cup unsalted butter, melted and cooled to room temperature
3 lbs. peaches, peeled and cut into 1 inch slices
3 cups (14 oz.) blackberries or blueberries.
In a large bowl, combine oats, flour, light brown sugar, Classic Baking Blend and kosher salt. Stir with a whisk. Add melted butter, stir to combine. Set aside 1 cup of mixture.
Coat a 4 to 5 quart slower cooker with cooking spray. Place peaches, berries and remaining oat mixture into slow cooker, stir to combine.
Sprinkle peach mixture evenly with reserved 1 cup of oat mixture. Lightly coat top with cooking spray.
Cook on LOW for 3 hours, until fruit is bubbly and top is crunchy or firm.
Serve warm or cold as a dessert with ice cream or for breakfast with yogurt.
