Greek Salad

Greek Salad
3 cucumbers seeded and diced
1 ½ cups feta cheese crumbled
1 cup Kalamata olives pitted and sliced
3 cups Roma tomatoes diced
1/3 cup sun-dried tomatoes packed in oil, drained( reserve liquid)
1 cup roasted red peppers julienned
1 ½ cups red onion diced

Greek Dressing
2/3 cup oil
2 tablespoons reserved oil from the sun-dried tomatoes
¼ cup red wine vinegar
½ teaspoon Dijon mustard
1 tablespoon Greek Bread Dipping Blend

In a large bowl toss together the cucumbers, feta cheese, olives, tomatoes, sun-dried tomatoes and red onion. In a small bowl combine all of the salad dressing ingredients and whisk thoroughly to combined. Pour dressing over salad mixture and stir to combine. Refrigerate until ready to serve. You can add chicken to turn it into a meal or add 4 oz. cooked Ziti and turn it into a pasta salad.
