Roasted Pork Tenderloin

1 1/2 -2 LB. Pork Tenderloin
Smoked Coffee Rub Original, Aji Amarillo or Chipotle 
2 Tablespoons Butter


1 Tablespoon Olive Oil (We used blood orange infused olive oil).
Pat the pork tenderloin dry with paper towels. Apply Smoked Coffee Rub to all sides of the meat making sure it is completely covered. Wrap pork tenderloin in plastic wrap and refrigerate for a minimum of 2 hours. 

Preheat oven to 350 degrees.

Place olive oil into skillet over medium high heat. When oil is hot, add the pork tenderloin to the skillet and sear on all sides, until it is browned.

Transfer pork to a baking sheet lined with aluminum foil, place pads of butter on top of the meat and close up aluminum foil.

Place in oven and bake for 25-30 minutes until internal temperate reaches 145 degrees. (Bake longer if using larger pork tenderloin.) Remove from oven and let rest for minutes before slicing.
