Sheet Pan Potatoes

1 lb. Yukon Gold Potatoes (do not peel)
1/4 cup olive oil
1 tablespoon Greekish Seasoning
1 teaspoon salt
Juice 1/2 lemon
1 teaspoon lemon zest


In a medium sized bowl combine the oil and Greekish Seasoning stir and let rest for 30 minutes or longer.

Cut potatoes into bite sized pieces. Place potatoes in pot with a lid. Add enough water to cover potatoes and add salt to water. Boil on high heat with lid for 10 minutes. 

Drain the potatoes, place the boiled potatoes into the empty pot cover with lid and give a good shake, this allows the surface to break up and more of the seasoning will be absorbed into potato.

Place the boiled potatoes into the bowl with oil and seasoning stir until coated. 
Line a rimmed baking sheet with parchment paper, place potatoes in a single layer and bake for 25-30 minute, stirring after 15 minutes. 

Remove from oven squeeze juice from 1/2 lemon over potatoes and sprinkle with lemon zest. Serve immediately.

Don't want to turn the oven on, try this recipe in the air fryer on the French fry setting.
