4 1/2 cups unbleached all-purpose flour
1 teaspoon salt
4 1/2 teaspoons baking powder
2 cups dark brown sugar
1 tablespoon Classic Baking Blend
2 large eggs
3/4 cup vegetable oil
1 1/4 cups whole milk
3 cups of diced peaches(not peeled), or a combination of other diced fruit or berries.
1/4 cup granulated sugar for topping
Preheat oven to 375 degrees. Line two standard muffin
pans with muffin cups.
Combine the flour, salt, baking powder, dark brown sugar and Classic Baking Blend in a large bowl.
Whisk together eggs, vegetable oil and whole milk. Stir into dry ingredients. This batter is not runny but a thick dough like consistency.
Gently fold in fruit.
Spoon 3 ounces of batter into each muffin cup. Sprinkle sugar on top of each muffin.
Bake muffins for 24-26 minutes or until they are golden, high risen and when a knife or tooth pick inserted comes out clean.
Remove muffins from oven and cool on rack.
