Tuscan Farmhouse Pasta
4 cups grape tomatoes quartered or 4 cups of fresh chopped tomatoes
2 tablespoon Tuscan Farmhouse Blend
¼ cup Basil Infused Olive Oil or EVOO
16 oz. ziti or rigatoni
½ cup freshly grated Parmesan cheese plus additional for serving
1 tablespoon salt
2 tablespoons fresh Basil, chopped (optional)
Bring 4-6 cups of water to a boil, add 1 tablespoon of salt and pasta and cook according to package directions.
While pasta is cooking, heat the oil in a large nonstick pan over medium heat until glistening. Add tomatoes and Tuscan Farmhouse to the oil, cook and stir for 5 minutes. The tomatoes will begin to break down and form a sauce. Remove pan from heat.
Reserve ½ cup of pasta water, drain pasta.
Add the cooked pasta to the tomato mixture and stir to coat. Add ½ cup of grated Parmesan cheese and the pasta water to the pan and continue to stir until cheese melts and the pasta is thoroughly coated.
Garnish with grated Parmesan cheese and chopped Basil.
