Chimichurri Beef and Rice Dip
1 serving of prepared Chimichurri Sauce, follow recipe on back label
1 cup of Jasmine Rice, uncooked
8 oz. lean ground beef
1/2 cup sour cream
1/4 cup can or jarred sliced pickled jalapeno peppers
Prepare Jasmine Rice according to package directions.
In a skillet brown ground beef over medium heat, drain meat and season with salt and black pepper to taste.
In a large bowl combine ground beef, chimichurri sauce, rice, jalapeno peppers and fold in sour cream.
Serve as a dip with corn chips, tortilla chips or crackers. This also makes a great filling for tacos, burritos or quesadillas.
